Lately I've been a bit of a night owl, often staying up late editing the manuscript for my next cookbook. It always leaves me craving a snack, but it has to be easy and incredibly satisfying.

My all-time favorite author, Jane Austen, loved toast with melted cheese and eggs.
Then there's the incredible Snoop Dogg, who satisfies his late-night cravings and inner child with a simple two-ingredient dish: a hard-boiled egg sliced on toast.

How to Make My Version of Snoop Dogg's 2-Ingredient Midnight Snack
First, you need to boil one or two eggs, and they need to be perfectly hard-boiled so they don't end up sulfurous or that green-gray color. To do this, fill a small pot with cold water, enough to submerge one or two eggs. I add a little vinegar and a pinch of salt, which keeps the eggs from cracking and makes the skins come off more easily later.
Add the egg straight from the fridge and bring the water to a boil over high heat. Once the water boils, remove the pan from the heat and cover it with a lid. Let the egg soak in this warm bath for 10 to 11 minutes. Then, drain the hot water and add cold water and ice to the pan to cool the egg. Peel the egg and slice it with a sharp knife. Season with salt and ground pepper (and, if you're a chaotic and adventurous cook like me, sprinkle a little sugar on the egg).
Next, you'll need toast. My favorite bread is almost-stale milk bread. When toasted, milk bread is crispy on the outside, but bite into it and you'll have a soft, feathery loaf that melts in your mouth. If you don't have milk bread on hand, sourdough also works, adding a tangy note. Top the toast with the sliced egg in an even layer, and voila, Snoop Dogg's beloved two-ingredient midnight snack.

Sometimes simplicity is king, but if you like to channel your inner Martha Stewart like me, these tips will make Snoop Dogg's snack even better. Butter the toasted milk bread with salted or unsalted butter. You can also brush the toast with olive oil or mayonnaise.
Seasoning the eggs with salt and pepper is a good idea, but for extra flavor, spice things up by drizzling the sliced eggs with chili crisp or topping them with chopped kimchi.
