Every now and then, or rather quite frequently, I discover fun foods while doing my regular shopping at ALDI. I've found small desserts, easy appetizers, and sodas. And now I can add vegetables to the list of my fun finds, like I discovered corn chops in the seasonal freezer section.
What's so great about Season's Choice Sweet Corn Ribs?
First of all, my family loves fresh corn, but corn season only lasts about a month where we live, and this year corn prices weren't as low. So I was happy to find out that At ALDI, you can buy a pound of sweet corn ribs, which are the finest part of the corn, for $3.49..
The picture on the bag shows what the corn ribs look like after grilling. They don't come out of the bag with nice grill marks—you have to grill them to get that look, which isn't hard. (There are other ways to cook corn ribs, like air frying and microwaving. You can also boil them.)
I would say that grilling gives the best flavor, as it adds a little smokiness to the sweetness of the corn. Since these are ribs (cobs cut so they can lay flat on the grill), grilling is an easy choice. The instructions say to grill them for 10-15 minutes, but if you defrost them first, they will cook faster.
Next, brush the corn ribs with butter and salt, or you can get fancy. I recommend adding mayonnaise, cotija or parmesan cheese, a squeeze of lime juice, and Tajín to turn them into easy Mexican street corn.
What's even more fun about eating these corn cutlets is that they bend easily, making them easy to twist and turn as you eat them. Or at least that's what my teenage son thought. I told him it was corn that could bend like him (he's a gymnast). He wasn't impressed by my comment. Whether your kids are gymnasts or not, they might have fun bending these too.
