Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted and slightly cooled
  • 3 large eggs, room temperature
  • 1 1/2 cups granulated sugar
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup all-purpose flour (or a gluten-free blend, if needed)
  • 1/4 teaspoon salt
  • 1 1/2 cups sweetened shredded coconut

Optional:

  • 1/2 teaspoon coconut extract for extra coconut flavor
  • Powdered sugar for dusting after baking
  • Toasted coconut flakes for garnish

Instructions

1. Preheat the Oven:
Set your oven to 350°F (175°C). Grease a 9-inch pie plate with butter or nonstick spray.

2. Combine the Wet Ingredients:
In a large mixing bowl, whisk together the melted butter, eggs, sugar, milk, and vanilla extract until well combined and smooth. If you’re using coconut extract, add it here.

3. Add the Dry Ingredients:
Sprinkle the flour and salt over the wet mixture and whisk or stir until just incorporated. Don’t overmix—just blend until you no longer see streaks of flour.

4. Fold in the Coconut:
Add the shredded coconut and stir gently to distribute evenly throughout the batter.

5. Pour and Bake:
Pour the batter into your prepared pie plate. The mixture will look thin, but don’t worry—it will set as it bakes. Place the pie plate on a baking sheet to catch any possible spills.

6. Bake Until Golden:
Bake for 45–55 minutes, or until the edges are golden brown, the center is set, and a toothpick inserted in the middle comes out mostly clean (a few moist crumbs are fine). The pie will puff up as it bakes and settle as it cools.

7. Cool and Slice:
Allow the pie to cool at least 20–30 minutes before slicing. It’s delicious warm, at room temperature, or chilled from the refrigerator.

Notes

Don’t worry if your pie develops a slightly golden, crisp edge—this is exactly what makes crustless coconut pie so charming! Each batch might look a little different, and that’s part of its homemade appeal. If you’re baking for a crowd or a special occasion, feel free to double the recipe and bake it in a larger dish. Most importantly, have fun and don’t be afraid to make it your own with favorite add-ins or creative toppings. Happy baking, and may every slice remind you that the simplest recipes often bring the most joy!
