1 whole ripe pineapple, peeled, cored, and chopped

1 English cucumber, chopped (you can leave the skin on for extra crunch)

2 limes, zested and juiced

1/3 cup fresh cilantro, roughly chopped

Salt and black pepper, to taste
Instructions
Start by chopping your pineapple and cucumber into bite-sized chunks. Try to keep the sizes similar for a balanced texture. Zest and juice your limes, and give your cilantro a rough chop.
In a large bowl, toss the pineapple and cucumber together. Add the lime zest, juice, and cilantro. Gently mix to combine, being careful not to mash the fruit.
Add a pinch of salt and pepper to taste. Let the salad sit in the fridge for 15–30 minutes before serving to allow the flavors to meld.
