Ingredients

  • 2 medium cucumbers (about 1 lb / 450g)
  • 1 medium white or red onion
  • 3 medium tomatoes (about 1 lb / 450g)
  • ½ cup white vinegar (120ml)
  • ¼ cup water (60ml)
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh chopped dill (optional)


Instructions

1. Prepare the vegetables

Wash cucumbers and tomatoes. Peel the cucumbers if you prefer a softer bite. Slice cucumbers into ¼-inch rounds. Peel and thinly slice the onion. Cut tomatoes into wedges or chunks.

2. Make the dressing

In a separate bowl or jar, combine the vinegar, water, sugar, salt, and pepper. Whisk until the sugar is fully dissolved.

3. Mix it all together

Add cucumbers, onions, and tomatoes to a large mixing bowl. Pour the vinegar mixture over the top and add the olive oil. Gently toss to coat everything evenly.

4. Add herbs (optional)

If using fresh dill, stir it in for extra flavor.

5. Marinate

Cover the bowl and refrigerate for at least 2 hours, ideally 4. Stir occasionally while chilling to help the flavors blend.

6. Serve

Before serving, drain off some of the liquid if you prefer a less juicy salad. Serve cold for the best texture and taste.
