Ingredients
For the Casserole:
- 1½ pounds thinly sliced beef (such as ribeye, sirloin, or even roast beef)
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 8 ounces mushrooms, sliced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 8 ounces cream cheese, softened
- ½ cup mayonnaise
- 1 cup shredded provolone (or a similar melting cheese like Swiss or mozzarella)
- 1 cup shredded mozzarella
- ¼ cup grated Parmesan
For the Seasoning:
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. Cook the Beef
Warm the olive oil in a large skillet over medium-high heat. Add the beef and cook until browned and cooked through. Season with salt and pepper. Move the cooked beef to a plate and keep it aside.
3. Cook the Vegetables
In the same skillet, cook the onions, bell pepper, and mushrooms until softened and slightly browned, about 5–7 minutes. Remove from heat.
4. Make the Cheese Mixture
In a medium mixing bowl, combine cream cheese and mayonnaise. Stir until smooth. Mix in Parmesan and half of the provolone and mozzarella.
5. Mix the Seasonings
In a small bowl, combine garlic powder, onion powder, oregano, basil, red pepper flakes (if using), and a pinch of salt and pepper.
6. Assemble the Casserole
- Spread half of the beef in the baking dish.
- Sprinkle with half of the seasoning mix.
- Layer the sautéed vegetables over the beef.
- Spread the cheese mixture evenly over the vegetables.
- Add the remaining beef and seasoning.
- Top with the rest of the shredded provolone and mozzarella.
7. Bake
Bake uncovered for 25–30 minutes, or until the top is bubbly and golden.
8. Let It Rest
Allow the casserole to sit for about 5–10 minutes before slicing and serving.
Customization Ideas
- Low-Carb Option: Skip the mayonnaise and use only cream cheese to reduce carbs.
- Bread Layer (Not Low-Carb): For a sandwich feel, add a layer of toasted hoagie rolls or bread at the bottom.
- Meat Substitutes: Ground beef or leftover steak work just as well.
- Cheese Variations: Try using cheddar, gouda, or pepper jack for different flavors.
