A few weeks ago, I had the pleasure of trying a refreshing cucumber salad at a local restaurant. I had tasted it before but had forgotten just how delicious it was. Inspired by its fresh flavors, I decided to recreate it at home—and I’m so glad I did! This cucumber salad turned out to be absolutely delightful, and the best part? It’s super simple to make!

This recipe requires just a few minutes of prep time, and you can easily store it in your fridge for a few months, making it a convenient side dish to have on hand whenever you need something light and tasty.
To keep it fresh for an extended period, I recommend drying the salad first, then cutting the vegetables into small pieces. Store the mixture in a glass jar with an airtight lid, and place it in the refrigerator. This method ensures that your salad stays fresh for up to a month.
If you’re in the mood for a colorful twist, feel free to add different types of bell peppers—green, yellow, or red. The more colors you add, the more vibrant and appealing your salad will be. However, if you prefer, you can skip the jar and serve it directly in a salad bowl, letting it chill before serving.
Ingredients:
- 1 cucumber
- 1/2 bell pepper
- 1/2 small onion
- 250 ml vinegar
- 1 tablespoon salt
- 1 teaspoon celery seeds
- 1 teaspoon mustard seeds
Instructions:
This recipe yields just under 1 liter of delicious cucumber salad.
1. Prepare the Pickling Mixture:
In a saucepan, combine the vinegar, salt, sugar, celery seeds, and mustard seeds. Heat the mixture until the sugar dissolves, and it begins to boil.
2. Cool the Mixture:
Once the mixture starts boiling, remove it from the heat and allow it to cool completely.
3. Slice the Vegetables:
As the vinegar mixture cools, slice the cucumber, bell pepper, and onion into thin pieces.
4. Combine and Store:
Place the sliced vegetables in a clean quart-sized jar. Pour the cooled vinegar mixture over the veggies, making sure there’s about 2/3 cm of space left at the top of the jar.
5. Seal and Refrigerate:
Seal the jar with the lid and refrigerate it until you’re ready to serve.
And there you go! Your pickled cucumber salad is ready to enjoy. It’s a perfect, tangy addition to any meal and can be stored for months in your fridge. Enjoy the fresh flavors whenever you like!
